Proofing Baskets
Natural wood (Rattan) Proofing Baskets have the potential of developing a gray colored mold when not cared for correctly. Below are a few tips that will prolong the life of your proofing baskets.
Prior to first use:
Lightly spray new proofing baskets with pan release (such as the pan release you use for baking tins).
Dust with flour.
Gently tap the outer sides and bottom of baskets to remove excess flour.
Daily:
Gently tap the outside of baskets to remove excess flour and debris.
Lightly spray the baskets with pan release
Dust with flour
Monthly:
Brush baskets with a dry plastic bristled brush.
Lightly spray with pan release.
Dust with flour.
Quarterly:
Wash baskets by hand with a brush and warm water.
Place wet baskets in a 250˚ F oven for 20 minutes.
Store warm baskets on rack at room temperature until completely dry.
After they are completely dry spray with pan release and dust with flower.
NEVER stack baskets when they are wet or damp.
NEVER store your baskets in plastic.
